Yes bitaddress Org and walletgerator Net are good for that purpose I double check the private key offline in both to be sure that the address exists I don't use paper wallets anymore these days though I get along well with my ledger Nano s

So, in the end, you depend on the app and the developers of copay to not steal your data and password from the old wallet Meaning that in order to be very protected (or at least a bit more) you would have to send from a new wallet every single time
