Good morning mam, I purchased one iron kadai one yr before, I used to cook fry, poriyal in it, if I cook kurmas like coconut based, coconut paste in veggies it became discolored, what can I do??? Even one yr later it is discoloring

Mam i tried your way but the kadhai started to turn brown from the middle The flame was slow Still it is turned little brown now It is new iron kadhai, never used Any solution for this? Or did i do any mistake? brI used refined sunflower oil and heated it on lowest flame It turned brown even before smoke came Thats why i turned off
