You don't need to make a Roux with flour and butter every time Get a block of Velveeta and do what this person is doing I've been doing this for years for a quick mac and cheese with burgers or whatever Yes I do the Roux recipe for baked mac and cheese but for a quick side dish during the work week for my family this works Great and takes no time at all and my family Loves it!
