Before I got my grill, I made a pastrami clone using sous vide, the oven and liquid smoke Since I couldn't travel to get my hands on brisket, I used silverside (Bottom Eye Round, I think?) The best one I did was the one I injected with the same kind of needle you usedbrbrI think you may have hit the nail on the head about the fat part The cut I used was not fatty at all so the extra flavour penetration and the injection helped with the texture, juiciness and the like When it comes to fat, there are smokers and grillers that will only ever spray the meat, not the fat, so it could very well be that it impedes fat renderingbrbrLove the content as always, Ninja! Great video comparing pork shoulder I also tried both ways and you’re right depending on the injection will give it it’s predominant taste I always used Adobo injection just like when I smoke a whole pig Love that flavor so that’s my go to injection Do I inject everything I smoke? Nope, because sometimes its a pain in the ass But one thing I have found out and you mentioned it, you have to smoke an injected piece of meat a little longer than the control The juices inside the meat protect it longer from the smoke/heat, therefore it needs more time to render the fat Ok, one thing I would do that you did not, is you said you would not inject in the future, but we already know she likes injected meat better, so my friend, “a happy wife leads to a happy life” Of course Ms Ninja, Mr Ninja would be happy to inject a pork shoulder to your liking I know that’s what he was really trying to say LOL 😂 You guys are the best Love you both Comment from : @johnt5845 |
